Celebrate Chinese New Year with Dan Dan Noodles!

I’ll never forget the first time I tasted Dan Dan Noodles at a local Asian eatery called Han Dynasty here in Philadelphia. “Souped up Ramen Noodles”, that’s probably the best way to describe them and that’s literally how all my friends who visit describe it after having them for the first time. There are so many different recipes for Dan Dan Noodles that you just have to find one that has the flavors and ingredients you love. I’m used to a basic Dan Dan Noodle as every time I’ve had it it’s been served as an appetizer and not the main meal.  

For this dish, I opted to combine two separate recipes to create one that I felt held true to the Dan Dan Noodles I’d come to love from Han Dynasty. I’ve seen recipes that have tons of added ingredients, but this one is a bit more simple with just green onions used as a garnish. I even had a chance to venture to H-Mart, the Asian Grocery, where I was able to pick up most of my ingredients which was an adventure all in itself. This is a great recipe to try out for the celebration of Chinese New Year which is coming up pretty soon. If you have people who don’t like much spice you can easily make this dish mild and make an extra spicy sauce on the side to pour over your noodles.

Ingredients
  • Udon Noodles
  • Green Onions
  • For Meat:
  • 2tbsp Vegetable Oil
  • 12 oz ground pork
  • 2 tbsp ginger
  • ¾ cup chicken stock/ chicken broth
  • 2 tbsp chili oil
  • 2 tbsp red wine vinegar
  • 2 tbsp soy sauce
  • 4 teaspoon tahini paste
  • 1 teaspoon of Sichuan peppercorns
  • Pinch of Sugar
  • For Extra Sauce
  • 2tbsp veg oil
  • 2 tbsp Tahini Sesame paste
  • ⅓ tbsp soy sauce
  • 2 tbsp water
  • 2 tbsp chili oil
  • 2 tbsp garlic chili spice
Instructions
  1. In a wok add vegetable oil and brown ground pork. After 2 minutes add ginger and garlic. Cook until completely brown. Add remaining ingredients and stir frequently. Set to aside.
  2. For the extra sauce mix all ingredients in a bowl and whisk until thoroughly mixed.
  3. Cook the udon noodles according to package. For this recipe, I used four bundles of Udon noodles. Rinse with cool water.
  4. Add Dan Dan sauce to the bottom of the serving dish. Top with Udon Noodles and cooked pork. Garnish with green onions. Toss at table side.

    Really like that this hearty noodle dish comes together rather quickly -and- tasty ingredients (luv anything that uses ginger!). Lovely images!!
